One year without buying bread
Hello everyone. I'd like to celebrate with you my 1 year journey with sourdough making with this 72% hydration hazelnuts sourdough. I still have a lot to learn but it's getting better and better. Could have used a bit more bulk but I didn't have time.
400 g of white bread flour 72% water 30% levain 2% salt
3.5 h at 27°C 5 h at 4°C
