Outlook alternative

Currently, all of our email services are running smoothly on Google Workspace. However, the new version of Outlook wants full access to our Google data and suggests copying everything to MS for "convenience" — an unreasonable request to say the least. Additionally, it appears that the old version of Outlook is unable to connect to Google via IMAP now.

Are there any ways to make Outlook work with Google Workspace without migrating to something else? If not, what alternatives should I consider?
