Another eye opening experience with a cup from the shop vs my home brew

I bought a bag yesterday at Origin in London as my usual mail order wouldn't make in it time, and was told that every bag purchase in the cafe comes with a complimentary filter coffee so had a batch brew from there. It was so annoying because it was the best cup I've had in a long time. I've been brewing at home for a long time, with a electric gooseneck, v60, and zp6 which I've learned to dial over the past years and I feel as though I have a good grasp of how to dial in a coffee, but I just can't get a cup that is as good. It had zero bitterness or sourness, just crystal clear fruitiness. I've had similar experience before in other cafes where I just can't* quite replicate the cup at home. Have you had similar experiences? Part of me thinks it may be due to the grind quality as I've ordered some pre-ground recently which was incredible, but when I reordered the same bag and ground at home I just couldn't replicate the clarity of flavours. Other variables could be at play of course. Any clues?
