Grindy Games where you can interact with randoms/others but have solo aspects

Hi, I'm in a gaming drought and unsure what to play anymore, so I was hoping if anyone could recommend anything similar to what I'm craving.

I like games like Fallout 76 or Minecraft, where I can join medium/large servers and can interact with others or paly with friends, like in events or trading, but also have aspects where I can grind myself for an objective or other stuff. However, I don't think I would like MMORPGs like WoW or FF14 since the number of abilities and other things could confuse me. Also, the subscription thing is kinda a turn-off.

I also like playing games when I'm in a party against PVE like Helldivers 2 or Cod Zombies, or party against other people like Party Animals or League of Legends/Deadlock, where both ideas have some unlockables to work for.

I was thinking of Project Zomboid, but I heard that it's better to play with mods, and there aren't that many public servers. I was thinking of Deep Rock Galactic, but I'm not sure about that one as well since I think it's better to play with a party.

If you can recommend any other games or any insights on what I have above, then feel free to reply since I have no clue what to play.
