Best fancy and trad NM food in town?

Hi! My family is coming to visit next week, and I'd love to get my fill of green chiles and sopaipilla, both in their classic (The Shed, Atrisco) and elevated (Estevans... Arroyo Vino?)

As you can maybe tell, I've done a little rooting through the sub, Eater, Google Maps, etc, but with restaurants opening and closing so fast, and quality and service really changing all the time (at least here in NYC), I was wondering what the latest and greatest might be.
