Get non-resident NIE to buy a property

Hi, I have signed an initial contract to buy a property in Spain and have to go back this year to finalise the signing at the notary. I would like to know what the best approach is to do this. Is it better applying in the UK at a Spanish Embassy or can I get it done quickly when I go to Spain.
